Since ever people in the mountains are living isolated and in poverty.
The bread baking represents one of the most important customs for the population.
The respect and the gratefulness for bread are and have always been very great. The bread baking was done twice a year and it was a real happening.
Preparations lasted various days and required the collaboration of the whole family.
Following some typical recipes :
'Woodcutter Bread'
100 gr brown rye flour
200 gr whole wheat flour
100 gr white rye flour
100 gr white weat flour
50 gr sunflower seeds
50 gr lard or oil
35 gr yeast
3/8 l warm milk
1 teaspoon sugar
½ teaspoon salt
some bran for the oven pan
Cooking time 25 min.
Whole flour Bread
100 gr whole wheat flour
200 gr whole rye flour
100 gr whole barley flour
100 gr whole oats meal
50 gr boiled pearl-barley -
300 gr sour yeast
3/8 warm milk
1 teaspoon salt
some bran for the oven pan
Cooking time 35 min
Brown Bread
100 gr rye flour
1 teaspoon cumin
200 gr whole rye flour
2 teaspoon fennel
200 gr rye bran
4 teaspoon caramel
300 gr sour yeast
3/8 l warm water
1 teaspoon salt
bran for the oven pan
cooking time : 40 min.
Cassette Bread
600 gr wheat flour
25 gr yeast
3/8 l warm milk
½ teasoon salt
butter and flur for the cassettes
cooking time : 60 min.
Land Bread
500 gr whole rye meal
100 gr wheat grains
40 gr yeast
3/8 l warm water
1 teaspoon sugar
½ teaspoon salt
bran for the pan
cooking time : 25 min.
Rye Bread
200 gr whole flour
100 gr rye flour
100 gr rye bran
100 gr wheat flour
30 gr yeast
3/8 l warm water
1 teaspoon anise
cooking time : 35 min.
