The Duivekater

Recipe

Ingredients:


1 kg high protein flour
± 400 gr. water or 450 gr. milk
100 gr. yeast
20 gr. salt
 40 gr. of dried milk
 30 gr. zest of lemon
 50 gr. butter
 240 gr. balm

Preparation:

Mix yeast with water or milk, then add other ingredients and knead properly into a dough.
Dough temperature 26 ºC.
Leave the dough in a warm place to rise for app. 40 min. Then divide into two pieces of 850 gr.
Make balls.
Prove for 35 minutes until well risen, after that mould like a normal loaf (length of about 32 cm).
Place the pieces of loafshaped dough on a greased baking tray and cut them on the sides in a special decorative way then cut on top lengthwise.
Bake in a moderate (2000 C.) oven 35-40 minutes.

For me ¨The Duivekater brings back childhood memories. As a child I was fascinated by its name and shape.
