My favourite bread: TELERA

This bread is a famous speciality of Córdoba. In Extremadura it is made in the following way. It has a very short kneading time, and the dough is immediately made into the loaves. So, we obtain a bread with a closed and uniform aspect. This oval loaf is one of the typical types of candle bread.


Ingredients

  • Wheat flour (W=200; P/L =0,8): 10 k
  • Water: 4,5 llitres
  • Salt: 200 g
  • Masa madre: 3.000 g
  • Mejorante: c.s.
  • Yeast: 200 g
