The following comparison of working results is based on the groups of questions from the university of Ulm in order to obtain an uniform structure.

1. Kinds of Bread

Which bread types did you eat in your childhood?
Which bread do you like most today?

Like the many varieties of bread in Europe, so different were the answers to this question. While in Germany rye bread or rye mix bread is the most typical, in all other countries wheat bread in different forms and shapes (sticks, sandwich bread, rolls) are mostly eaten. From Czech Republic there was no report on the subject. This is valid for the childhood and youth of the interviewed persons as well as for the present. During the time of shortage - war and after-war time- bread was not very tasty in none of the countries as substances like bran and corn starch had to be added.. In Italy during this time home baking was usual, also in the towns the dough was carried to the bakeries for baking.

Today there is a trend for more “healthy” bread in all countries, i.e. whole meal bread - in Germany from rye flour, in other countries supposedly from wheat flour - and bread with grains and seeds is popular with people of the older generation.

 

 

The German people like bread types from foreign countries , specially baguette (France), ciabatta (Italy) and (Turkish) flat bread. This is also the case in the Netherlands with the inclusion of the German sour dough bread. In France and Spain the share and popularity of foreign bread types in the eating habits is relatively low. There were no results available from Italy and Czech Republic.
